After blending we rested this expression of Levain on 3.5 pounds per gallon of Montmorency cherries from Michigan. The beautiful tart cherries contributed a vibrant ruby hue and notes of baking spices, almonds, and a distinctly bright fruitiness, all of which integrate wonderfully with the funk, depth, and complexity of base beer.
